Healthy Granola Sweetened with Jaggery

Tired of buying that EXPENSIVE GRANOLA in the store? Why not make your own at home? And not with sugar or honey, but with jaggery!



With hectic weekdays and more hectic weekends, when all house chores just jump onto your shoulders, revert to this easy and healthy breakfast idea! The beauty of the recipe is its variations. Don't like cinnamon? Add other spices you like. Don't like pumpkin seeds? Cool, skip them. Just follow the proportions and delicious granola is guaranteed.


Ingredients: 500g - Whole or Rolled Oats (not instant, not steel cut)

1/2 Cup - Coconut Oil

1/2 Cup - Melted Jaggery (or honey)

1.5 Cups - Nuts and Seeds (Almonds, Sunflower Seeds, Pumpkin Seeds, Flax Seeds)

1/2 Tsp. - Salt

1/2 Tsp. Cinnamon Powder

1 Tsp. Vanilla Extract


Instructions:

Step 1 - Combine all the dry ingredients in a bowl (oats, nuts and seeds, salt, cinnamon powder).

Step 2 - Melt jaggery on a low flame until it becomes liquid (you may add little water while melting the jaggery) and immediately add the melted jaggery to the dry ingredients along with other wet ingredients (coconut oil and vanilla extract).

Step 3 - Combine all the ingredients in a bowl and mix thoroughly till all the wet ingredients coat the dry ingredients.

Step 4 - Spread your mixture onto a baking tray that has been lined with parchment paper.

Step 5 - Preheat your oven to 180°C with the heat applied from the top and bottom.

Step 6 - Gently fold your egg white into your batter.

Step 7 - Bake your granola for 25 to 30 minutes.

  • Halfway through your bake time (around 15 minutes in) remove the tray from the oven and toss the granola around.

  • Place the tray back into the oven and continue to bake for the remaining time.

Step 8 - Top the waffles with the toppings of your choice (here we topped with cream cheese frosting, honey, mango, cranberries and peppermint).

Step 9 - Cool the Granola before breaking it up and packing it.

Step 10 - Bon Appetite! It is time to have your granola as a snack or make a delicious parfait!

Your recipe mentions egg whites and waffles in it. Are there steps missing from the above granola recipe ?
