A guilt-free indulgence filled with the goodness of rich fibre from oats and whole wheat, and the sweetness of jaggery!
Ingredients:
1/2 Cup Unsalted Butter
2/3rd Cup Jaggery (or brown sugar)
1 egg (room temperature)
1 Teaspoon Vanilla Extract or Vanilla Essence
3/4th Cup Whole Wheat Flour
1/2 Teaspoon Cinnamon Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Corn Flour
1/4th Teaspoon Salt
1&1/2 Cups Oats (instant white oats)
Instructions:
Step 1: Melt the butter and Jaggery, and let the mixture cool down a bit.
Step 2: Add the egg, and vanilla to the mixture and combine well.
Step 3: Add the whole wheat flour, cinnamon, baking soda, corn flour, and salt and combine well.
Step 4: Add the oats into the mix and combine.
Step 5: Preheat your oven to 180°C (350°F)
Step 6: Shape the cookies and place on your bake tray (wet hands to avoid dough sticking - weigh cookies to roughly 30g to 40g to maintain even shape, or bake in a shape of your choice)
Step 7: Bake at 180°C for 12 to 15 minutes, applying heat from the top and bottom rods of your oven. Step 8: Cool down cookies for 10 to 15 minutes on a cooling rack Enjoy your whole wheat jaggery oatmeal cookies with a beverage of your choice, or simply by themselves!
